Fun Fall Recipes
As promised, here are some fun fall recipes. If you want to find recipes on the internet, you can always just use a basic search engine. I also like to use AllRecipes.com* because you can enter ingredients that you want or don't want to use (very useful for food allergies). I hope you enjoy the recipes below or try something new on your own! Eat well and prosper!

You will need:
3 cups all-purpose flour
2 cups sugar
2 tsp baking soda
1 tsp each: cloves, cinnamon, nutmeg
1/2 tsp baking powder
1/2 tsp salt
1x15-16oz can pumpkin
2/3 cup vegetable oil
3 eggs, slightly beaten
2 loaf pans
Directions: Grease loaf pans. Preheat oven to 350. Mix all dry ingredients. Add pumpkin, oil, & eggs. Mix just until blended (Stirring with a wooden/bamboo spoon works just fine!). Pour into loaf pans, splitting batter as evenly as you can manage. Bake for one hour at 350. Check for doneness with a toothpick (When the toothpick comes out clean, it's done!). Cool on racks for at least 10 minutes. Remove from pans & allow to cool. Store wrapped tightly in foil or in an airtight container.
You will need:
4-5 apples of your choosing, not too soft - Granny Smith apples hold up well.
Cinnamon, brown sugar, nutmeg, ginger
Directions: Core apples. Pull out squares of foil, one for each apple. Place apple in center of foil. Add ~1 Tbsp butter/margarine to empty center of apple. Add brown sugar & seasonings as desired. (Option: Mix butter/margarine with brown sugar & seasonings, then spoon into center of apple.) Wrap apple tightly in foil. Bake in oven at 350 for about 30 minutes. May also be cooked on the grill. The apples are done when they squish when you squeeze them gently. Unwrap apple (Be careful, it's hot!) into a bowl & cut into pieces. May be served alone or with ice cream. Enjoy!
You will need:
12 cups air-popped popcorn (or 1 full Whirley-Pop of popped corn)
1 bag of Kraft Caramel Bits
2 Tbsp water
Parchment Paper or Waxed Paper (Parchment paper is easiest!)
Optional- Semi-sweet chocolate, shavings or finely chopped
Directions: Preheat oven to 300. Pop popcorn if needed. Put caramel bits and water into saucepan. Cook on low heat, stirring often, until caramel is completely melted. Place popcorn in large bowl. Drizzle with the melted caramel & stir gently to evenly coat the popcorn in caramel. If using parchment paper, line baking sheets with parchment. If not using parchment, grease baking sheets. Spread popcorn onto baking sheets. Bake 20 minutes total, stirring after 10 minutes. After 20 minutes of baking, if you are adding chocolate, sprinkle it in & toss using two spoons until it is well mixed. If using parchment paper, you can slide the paper off of the pan onto a cooling surface (a cooling rack or a stone countertop). Otherwise, lay out waxed paper on a cooling surface & spread popcorn onto the waxed paper. Allow popcorn to cool completely. Break apart into small clusters or individual pieces. Store in tightly covered container at room temperature for up to one week. This is one of our favorite fall holiday recipes! Enjoy!
